Picture your meat like a slinky. When your meat is warm is like the picture above- all jiggly and loose.
If you take your meat from the fridge where its cold and throw it on a super hot grill or oven, picture your meat like the slinky below. Not wiggly.
Your meat goes into shock so to speak and tenses up. This is visible to the eye, your meat literally tries to go into a ball.
Before I grill, I always try to set out my meat way before grilling to bring to room temperature. So the meat fibers stay like slinky #1, all tender and loose.
You can also picture the slinky when you are going to cut open your steak fresh off the grill.
STOP!
The juices or fibers in your meat are hot and free flowing inside the meat. If you cut at this point the juice is going to spill out.
