TIP OF THE DAY- I FREEZE CHICKEN TOO
So, in regards to my post “What I keep in the freezer to get dinner on the table Fast.”
I also buy the hind quarters of chicken often, as they go on sale a lot cheaper and often than breasts do.
I season up a big batch of chicken hindquarters and have my husband either start up the grill, or I roast them in the oven. We eat a few pieces for dinner and the rest gets de-boned for a quick chicken salad (stay tuned for the recipe), or placed in a quart sized baggie, flattened, and froze for later use.
I then used this chicken for dips, soups, salads, nachos, etc.
