TIP OF THE DAY: HOW TO CLEAN MUSHROOMS
Mushrooms. Do you love them? Do you know someone who loves them?
Well let me share a tip that might make you love them even more. Meaning, how do you get mushrooms to be more flavorful?
Well you can start by NOT washing them!
Mushrooms (all except for morels) are like sponges and absorb water, leaving them wet and soggy. When a food source has lots of moisture in it it wont brown when sautéing.
To wash mushrooms use a damp paper towel to wipe one at a time, to remove any dirt. You can lightly rinse the mushrooms with cool water and pat dry with paper towels, but do not soak the mushrooms.
Morels however are different. Cut a thin slice off the bottom of each stem. Rinse in cool water to remove any dirt and insects. If the mushrooms look clean, this may be enough; if not, a short soak in lightly salted water brings out any remaining insects and dirt. Rinse the morels well and then pat dry.
Note: When cooking mushrooms use a pan plenty big. Mushrooms need space to properly cook.
