Who doesn’t love a good Beef Roast? How about the one million ways to cook a beef roast? Which one is the best? Should I stick with my grandmothers recipe? Should I break out of the “norm” and try a different recipe? AAAAHHHHHH!!!!! So many decisions!
Well I’m here to tell you that I have asked myself all those questions- and I have finally (I think) settled with The Best Beer-Soda Beef Roast as my ultimate favorite.
This recipe really takes all the recipes I have tried before- and everything I love about each one- and combined it into one amazing recipe.
I love the flavor of beer with my meat. But I know some prefer a good ‘ol can of Coke. The reason we use soda or beer in this recipe is so the acidity can help break down the tough fibers in the meat- resulting in a tender juicy roast.
Now that I have you persuaded, I hope, let’s see what you think? Go ahead- I dare you- get out your crock-pot or dutch oven and let the smells fill your home with lots of beefy LOVE 🙂
Ingredients:
- 2-pound boneless beef chuck shoulder roast (No substitutions! This is the best cut of meat for the slow cooker!)
- 1 bag of baby carrots
- 1 onion, chopped
- 3-4 Large potatoes, cut into chunks
- 1 packet of Dry Lipton Onion Soup Mix
- 1 can of beer or coca cola
- 1 can cream of mushroom soup, optional
- 1 crate of fresh mushrooms, whole or sliced
- 3 T Olive Oil
- 1 T. butter
- 3 garlic cloves, minced
- 1-2 cups beef broth, salsa, or salsa juice
- 1 T Worcestershire sauce
- salt and pepper
- 2-3 T tomato paste, optional
- 1 1/2 t. sugar, optional
Instructions:
- Place your veggies on the bottom and your roast on top
- sprinkle the packet of Lipton soup mix and salt and pepper over the roast and veggies
- Then pour your soda or beer
- Mix in a bowl the soup, oil, butter, garlic, broth, Worcestershire, tomato paste, and sugar (optional) and pour over meat and veggie mix in the pot.
- Cover and put on low for 6-8 hours.
- That’s it! Enjoy
Instant Pot Version:
Place all ingredients in Instant Pot lock it and let cook for 60 minutes on manual or beef/stew setting. Can either quick release or natural release.
