So, here is a recipe that is super quick and yummy, and perfect for all of us who are dealing with this crazy Iowa weather(cold, warm, hot, cold). My mom cooks it often and my siblings and I absolutely love it!
I love “one pot” wonders, don’t you? You had a long day at work, caring for the kids, or whatever your day brings, and cleaning the kitchen for hours or even just minutes is the last thing you want to do, right?

So my MOM’S CHICKEN AND BISCUITE CASSEROLE, is what is for dinner tonight.
I have found another great part of this dish is, its versatile! Another “fave” of mine in recipes. You can use chicken breasts, hind quarters (which go on sale often, so watch for that), or any chicken pieces of your choice.
So what’s in this dish you say?
Ingredients:
Chicken Pieces(usually we use a mix of legs, breasts, thighs, wings, and if you are my dad- the necks! Yuck! All with the skin on)
Cream of Mushroom Soup
Packet of Lipton Onion Soup Mix (I would say if you don’t have this, to try and season with maybe dried onion flakes or any seasoning of your choice)
Refrigerated Canned Biscuits (yes biscuits again, sorry but they are convenient)
Layer the chicken in a 9×13 pan ( or, however much chicken you want to make). Then cream of mushroom soup. Then sprinkle with Lipton Onion Soup mix. Cover with foil and bake at 350 degrees for about an hour, or until chicken is done, chicken needs to be an internal temp of 160 degrees.
Once chicken is done, remove foil from pan, and place biscuits on top! Now, my family loves the biscuits on top so we cram them on! They soak up all that delicious gravy made by the chicken and soup. Absolutely Delicious!
Bake until biscuits are golden brown. Remove from oven and DIG IN!

I love these kinds of meals, but unfortunately I have extremely sensitive tummies that can’t handle “cream of” soups, canned biscuits or the mixes b/c of the “other” ingredients included. I sure miss these “easy” meals though and this sounds delicious!
