Ever go through those spurts where you tell yourself you are gonna cook healthy? Whether you got motivation from a recent article you read, or a Facebook post, or a friend, etc., etc., etc, I am in that phase right now 🙂 Lucky me right? Well….. actually I am pretty lucky because a good friend and I are doing it together 🙂 We are calling it an “experiment.” Not a “diet!” So of course we have set out to find some new recipes (go figure). Maybe it was just me, but this Low Carb Mushroom Spaghetti Bake tasted pretty good if I do say so myself.
I used my pre-cooked beef to help me speed up the time and mess. I also purchased these amazing noodles that have nothing in them (which doesn’t make them good for me but don’t make them bad either right?) to smother my meaty mushroom mixture over if you must have that feeling of pasta 🙂
Another fun tip that I shared on Instagram is to save time use this amazing chopper to cut/dice your mushrooms up right in the pan saving you time and dishes. WIN!

Low Carb Mushroom Spaghetti Bake

Ingredients
- 1-2 # ground beef, cooked
- 1 carton mushrooms, sliced
- 1 medium onion, chopped
- butter
- salt & pepper
- basil, dried
- garlic salt
- high quality thick spaghetti sauce
- favorite shredded cheese
- pasta/rice, optional
Instructions
- Brown you beef or use your pre-cooked from freezer
- Saute your onions and mushrooms in butter just until soft ( remember we are popping this in the oven for a bit so we don't want to be mush)
- Season mixture with basil and seasonings
- Spread mixture in to a pan
- Top with Spaghetti sauce (you are gonna want your sauce to be thick since you are going to get quite a bit of moisture from your mushrooms while cooking)
- Top with cheese
- Bake uncovered at 375 degrees for about 10-15 minutes or until nice and melty 🙂
- Enjoy over pasta if you must but it is delicious by itself in a bowl.
