Sloppy Joes. Made a million and one different ways, but are pretty yummy each way. When I saw this Italian take on an American classic I hopped right on board.
This meal was actually a meal morph as well. You’ve heard me talk about the meal morphs a million times, but this meal stemmed from leftover garlic bread (which barely ever happens in our house btw), which is used as the base for this opened face Sloppy Joe.
The meat mixture is thick and packed with flavor. My family and I decided that this would have been a really good thick meaty sauce (if you are into meaty sauces like my hubby is) for spaghetti too.
These Sloppy Joes were great with my go to Olive Garden Salad and maybe a warm veggie.
- 2 T. olive oil
- 2½ # ground beef
- salt and pepper
- 1 red bell pepper, diced
- 1 onion, diced
- 5 cloves of garlic, minced
- 1-6 oz. can of tomato paste
- 1-28 oz. can of crushed or diced tomatoes
- 1 T. sugar
- 1 t. oregano
- 1 t. basil
- ¼ c. parmesan cheese
- Favorite frozen or brand of Garlic Toast
- Preheat oven and cook garlic bread according to package directions.
- Brown the beef in a pan and season with salt and pepper. Drain if desired and remove from pan.
- Next, add to a saute pan the olive oil, peppers, and onions and saute for a few minutes until soft.
- Add in the garlic and herbs and saute until well combined.
- Add back in the beef, and the tomato sauce, sugar, and herbs.
- Simmer for about 5-10 minutes until thick and flavors well combined.
- Remove from heat and stir in the cheese.
- Serve meat mixture atop the bread.
