I grew up loving my Grandma Blair’s Chicken and Rice Casserole. The addition of the pimentos always made this dish so special and memorable for me. Well, and the addition of the crunched up potato chips to smother over the top of the finished cheesy product always help too 🙂
Now, if you wanted to alter the dish and make it a little more figure friendly I would use whole grain rice, omit the cream of mushroom soup, add sautéed fresh or canned mushrooms, add canned or frozen peas, and maybe some plain greek yogurt or sour cream if you are still looking for that creamy texture, and of course a small amount of cheese. Make sure to always season with salt and pepper.
Ingredients:
- Cooked Rice
- Cream of Mushroom Soup
- Pimentos
- Shredded Cheese
- Shredded Chicken
- Potato Chips
Instructions:
- Cook your rice according to package directions.
- Once rice is done, no need to cool it, mix in your cream of mushroom, pimentos, chicken, 1/2 the cheese, and season with salt pepper.
- Spread into a 9×13 inch pan or whatever fits your yummy mixture better.
- Spread remaining cheese over top.
- Cover and bake for about 15 minutes or until warmed through. Remove foil and continue to cook until cheese is golden brown and bubbly.
