I was sooo excited to try these Crunchy Corn Cereal Chicken Fingers with my kids. I have done Dorito Crusted Chicken Fingers before and they are ALWAYS a hit!
So I set out to make these beauties with the amazing applesauce ketchup dipping sauce- BUT……. my kids didn’t like them! What???
I don’t know if it is because they have a sweet flavor from the cereal or what, but I always rate my recipes and want to be real with you guys- and my kids did not like! Maybe they were just being picky tonight, but I can say my husband loved them! He rated them a 8/9! (he said the only reason he didn’t rate them a 10 is because he figured he like steak better 🙂
Crunchy Corn Cereal Chicken Fingers

Ingredients
- Vegetable oil, for frying
- 1 c. flour
- salt and pepper
- 4 large eggs
- 2 cups Cap'n Crunch cereal
- 1# boneless skinless chicken breasts, cut into 1 inch strips
- ½ c. ketchup
- ¼ c. applesauce
- 2 dashes Worcestershire sauce
Instructions
- Heat ¼ inch oil in large skillet over medium-high heat or 350-375 degrees
- Put flour salt and pepper into one dish for breading process
- beat eggs in another dish
- Place cereal in a zip bloc baggie and pound with a pan, meat mallet, or your hands until mostly broken up and fine with a few bigger pieces.
- Transfer cereal to a 3rd bowl.
- dip chicken strips into the flour, then the egg, then the cereal.
- Drop into the hot pre-heated oil and cook for about 3-7 minutes depending on how thick your chicken breasts are.
- Drain on paper towels.
- Stir together the ketchup, applesauce, and Worcestershire.
- Serve strips while still hot with the dipping sauce.
- Enjoy!
