My husband and I have been on a “diet” or a “healthier” eating lifestyle if you want to call it that. When he came home to this Crock-Pot Creamy Italian Chicken over pasta for dinner the other night his comment was, “Good! Finally a normal meal again!”
I love this dish because you can make ahead and freeze all ingredients, you can either throw it in the crock pot to cook before you head out the door for work, or cook in oven for about an hour. I love versatility 🙂 How about you?
INGREDIENTS:
- 1 bottle of Italian dressing
- 1 pkg. of Italian salad dressing mix (or click here to see how to make your own)
- 2-8oz. pkg. cream cheese, softened
- 2 cans cream of chicken or mushroom( I always use cream of mushroom- just a personal preference)
- 3-4 pounds skinless boneless chicken breast or thighs
- Shredded cheese, optional (I like parmesan or cheddar)
INSTRUCTIONS:
- Whisk all ingredients together except the chicken.
- Divide mixture into 2 baggies (approximately 3 cups each). Divide your chicken into the 2 bags (click here to see the must have tool for freezer cooking).
- Press air out, label with permanent marker, lay flat, and freeze!
- When ready to cook. Defrost contents of bag.
- Place in crock pot on low for 3-4 hours or until chicken is cooked through(165 degrees). Or, bake in a shallow dish at 350 for about 45 min. to an hour or until chicken is cooked.
- Once cooked, sprinkle with cheese and place under broiler for a few minutes until lightly browned. Yummy!
- Serve over pasta, with a side salad and garlic toast.
