Chicken Fajita Casserole
Love this Chicken Fajita Casserole. It is super flavorful and even the “meat and potato” men in my life loved it.
Ingredients:
Chicken breast, cubed or (Click here to use your Freezer Chicken)
Fajita seasoning or (a sprinkle of cumin, chili powder, salt and pepper)
Onion
Green and Red Peppers (or whatever color you have on hand)- I love color!
Garlic, minced
Salsa
Tortillas, chopped or torn
Shredded Cheese
cilantro, sour cream, tomatoes, quacamole, optional
- In a large skillet, cook your chicken, onion, and peppers ( for a 9×13 pan I used about 8 small chicken breast, 2 peppers, 1 onion) – or use your Freezer Chicken
- Add your seasoning.
- Once Chicken is about done, add your minced garlic
- Layer 1/2 of your tortilla pieces in the bottom of your greased baking dish (I used about 6 Medium Tortillas for a 9×13 pan)
- Layer with 1/2 chicken pepper mixture
- Then a thin layer of salsa
- Sprinkle with Cheese and then repeat again.
- Bake covered at 375 degrees for about 30 min or until warm and melty. I removed the foil during the last few minutres so the cheese could brown a bit.
- Once done I like to top mine with cilantro, sour cream, quacamole, and tomatoes.
