The number one complaint I hear from other moms is that dinner always consists of the same meals over and over again. Even though we all have those true and tried recipes our families love, it is nice to mix it up a bit from time to time. This Instant Pot Sloppy Joe recipe was fun because it took a classic and put a unique twist on it (my hubby never even complained once it didn’t have meat either). It had a smoky slow cooked flavor, even tho it only took 12 minutes and paired perfectly with a piece of bread with butter and some fruit.
Instant PotMeatless Sloppy Joes

Ingredients
- 1 red onion, diced
- 1 green pepper, diced
- 1 c. lentils
- ½ c. broth or water
- 1 (15 oz.) can Tomato sauce
- 2 T. Worcestershire
- 2 T. Maple Syrup
- 1¼ T. red wine vinegar
- ½ t. salt
- ½. t. paprika
- ½ t. chili powder
- ½ t. garlic powder
- ¼ t. pepper
Instructions
- Add all ingredients into the Instant Pot insert
- Place the vent to seal
- Lock lid
- Hit Manual 12 minutes
- After the timer goes off let sit for about 5- 10 minutes before releasing the rest of the pressure.
- Serve plain, or on buttered bread.
