I know people get tired of everything Pumpkin in the fall time- but these Healthy Homemade Pumpkin Pancakes tasted like pumpkin pie for breakfast. If I would of added some whipped cream to them they would of really hit it out of the ball park.
My daughter actually brought this recipe home from school. They send this sheet home with students on how to incorporate seasonal items into healthy meals for your family and ideas to make mealtimes more fun such as:
- turning off the tv
- putting your phone on silent so you aren’t tempted to talk or text
- sit with your children
- look into your child’s eyes when talking to them
- forget about the stress of the day
My kids love pancakes and once I saw these Healthy Homemade Pumpkin Pancakes I had to immediately work into my weekly menu plan.
Plus whenever I make pancakes I make double so I can slip some into the freezer for future quick breakfasts. Remember- COOK ONCE EAT TWICE- I cannot stress this enough when trying to save time in the kitchen.
Ingredients:
- 1 c. flour
- 1 T. sugar
- 2 t. baking powder
- 1/2 t. cinnamon
- 1 c. milk
- 1 egg
- 3/4 c. canned pumpkin
- 1/2 c. vanilla/greek yogurt
- maple syrup
- whipped topping, optional
Instructions:
- Combine milk, egg, pumpkin, and yogurt in large bowl.
- Add flour, sugar, powder, and cinnamon.
- Stir batter until moist.
- Add a little more milk if you want a thinner batter and pancake
- Heat a non-stick skillet or electric skillet to medium heat.
- Spoon batter onto skillet and cook until brown on both sides, flipping half way through.
- Enjoy!
