Life Saving Nachos are the perfect go to dinner or lunch when the question, “What are we gonna have for dinner tonight that’s super quick?” is weighing heavy on your mind.
Ingredients:
- Ground Beef, Taco Meat, or Chicken
- Refried Beans
- Black Beans
- Sour Cream ( I use plain Greek yogurt)
- Shredded Cheese or Mexican Cheese (Queso Fresco)
- Olives, jalapeno, Tomato, Onion
- Chips(tortilla, Doritos, etc.)
- Guacamole
Instructions:
- Layer a thin layer of chips on a foil covered sheet tray
- sprinkle liberally with your favorite cheese
- layer more cheese and repeat with chips
- toast in oven or melt in microwave until cheese is melted and gooey
- Top with all the finishing touches, more cheese, tomato, onion, etc.
- Melt again if neccessary and Enjoy 🙂
If you keep a well stocked pantry, a quick throw together nacho plate can be a God sent for dinner, without the feeling like you failed at dinner its so good.
