You reach for Quick Chicken Fajitas!
If you want them to be healthy though I wouldn’t recommend eating them like I do…….smothered in sour cream! (Yes, I love love love sour cream- but I have learned to substitute plain greek yogurt once in a while and still get my fix).
Quick Chicken Fajitas

Ingredients
- chicken breast, steak, or shrimp, sliced(a tip to making cutting easy, is you do it when the breasts are still slightly frozen) (to save time you can buy pre-sliced breasts or have your butcher do the work for you)
- peppers
- onions
- sugar
- tortillas
- fajita seasoning, optional or sprinkle of cumin, garlic powder, onion powder, salt, pepper, chili powder
- condiments: guacamole, sour cream, cheese, tomatoes, lettuce, etc.
Instructions
- Slice your chicken breasts, peppers, and onions
- melt some butter and a little oil in pan
- Using a pan on the stove over medium high heat or a electric skillet start sauteeing chicken vegi mixture
- sprinkle with seasoning mixture and about a tablespoon or so of sugar to help thicken and carmalize
- turn heat to high when chicken is just about cooked through to carmalize mixture.
- Once chicken is done- dinner is served.
- To serve I grab myself a tortilla, spread a thin/thick 🙂 layer of sour cream on shell, layer with chicken and veggies, top with cheese, guac, and tomatoes. DELICIOUS!!
- Tip: Can make double batch when preparing, throw the second batch in the freezer. For even easier access and quicker cooking, lay raw chicken and veg mixture on a sheet tray and freeze first. Once frozen, break into pieces and place in baggie back in freezer.
