So, I grew up with mostly store bought spaghetti sauce, which was great!
As I became a mom, with a chef background, I was a little more frugal and tired of buying what I thought were “unnecessary items” that just filled my pantry when I already had the base of a tomato sauce in my pantry………………..canned tomato sauce of course!
…
So I made a very simple but delicious homemade quick sauce for pizza or spaghetti. Now what I have learned as a chef is, less is more!
Growing up I would always try and have a secret ingredient or put something “exotic” or “different” in my recipes to make them unique. But I have learned that LESS IS MORE!
Ingredients:
Canned Tomato Sauce
Dried/Fresh Basil
Sugar
I know my ingredient list isn’t precise, but cooking is about tasting as you go (remember: a recipe is a guideline), and like I always tell my husband when he overdoes seasonings is, “You can always add more! So start small.”
Variation: Of course you can add oregano or Italian seasoning, but I have found I love it with just lots of Basil, and having only 3 ingredients is just fine with me! The sugar is used to cut the acidic taste from the tomatoes. Play with it as you will, tasting, then adding, because you can’t take it away once you’ve gone too far.
Tip: Have you every noticed when seasoning your dishes that cold salads/foods require more salt? Well it’s not your imagination. Our taste buds are less receptive at colder temperatures, which requires more salt!
