Bacon! Bacon! Bacon! I am going to share with you How to Freeze Bacon for Easier Cooking Later. Who doesn't LOVE bacon? But who love's the frying splattering mess of grease everywhere? Not me! I know a lot of you probably already do this, and if you do GREAT, but if you don't you must start :) Utilize your oven and let it handle the mess for you. Simply preheat your oven to 350 degrees F and either line with parchment paper or with a wire rack, to allow fat to drain through. Once baked until your desired "crispiness" remove from oven( I like mine crispy, and my husband loves his "raw" as I call it). If you used parchment paper you will want to remove the bacon immediately from the pan , and place on a paper towel so it doesn't cool in all that flavorful bacon fat. You can also save the bacon grease by draining into a coffee mug and use for your morning eggs, or make a warm spinach salad by sautéing spinach in a little "gold"-aka bacon fat- with a little onion, bacon bits, and vinegar. After the bacon cools, I layer the bacon between paper towels in between each layer, and then place in a zipbloc baggie and place in freezer. WOW! The one word that comes to mind when I think of this 4 Ingredient BBQ Bacon Chuck Roast! You literally "throw" this dish together in an aluminum pan (which equals ZERO clean-up), the cost is minimal, and I dirtied like 2 dishes! WOW! WOW! WOW! I was introduced to this 4 Ingredient BBQ Bacon Chuck Roast for the first time, after knowing my best friend for like my whole life, in my adult life a few years ago at her daughters birthday party. To her this was just a dish she grew up with her dad always making, but to me it was a breath of fresh air that I couldn't believe I had never had or seen before. I mean it tastes amazing, and it is made from a Chuck Roast for CRYING OUT LOUD (who isn't looking for ways to feed their family with an affordable yet delicious mouth watering meat?). Delicious. Affordable. Easy. WOW. Here is how you "throw" my best friend Danni's 4 Ingredient BBQ Bacon Chuck Roast together. Ingredients: Chuck Roast Assorted Peppers, diced ( I used the leftover peppers from Kalys Eggless Breakfast Bake- click here to see recipe) BBQ Sauce 1# of Bacon, uncooked, chopped into pieces(this would add great flavor and I would recommend adding, but it is still amazing even without bacon) Instructions: Cut Roast into 1 inch cubes. Cut assorted peppers into 1 inch chunks. Throw beef, peppers, and bacon into a foil pan (you can get foil pans very affordable at a Wholesale Retailer such as Sams Club or Costco or one of my favorite places to go, Dollar Tree). Then pour your FAVORITE BBQ sauce liberally all over your meat pepper mixture. Cover with foil and place on your grill or smoker for about 1-1 1/2 hours or until meat is done and tender (we placed on our smoker at 300 degrees). You could also do this in the oven or even crockpot for that matter. Note: I prepared this dish Monday when I was making Kalys Eggless Breakfast Bake and it stayed nicely in my fridge for 3 days until I cooked it Thursday. Chicken Bacon Ranch Bake
Chicken Bacon Ranch combinations are all the rave. Whether it's a dip, casserole, wrap, or appetizer everyone loves the pairing of these 3 ingredients. So I paired them together in this super simple 3 step bake. All you do is follow the recipe title. Layer raw chicken breasts in a pan (this recipe is too easy not to make 2 pans and throw one in the freezer). Then drizzle with ranch dressing, and follow with bacon. I use my pre-baked bacon that I stash in the freezer! Bam dinner is done, plus another in the freezer for another night, or if you are feeling like a kind person that day maybe one for a dear friend or neighbor :) Win win! Looking for a super meaty dish??? This Easy Pizza Pasta dish will be just the one. Pizza mixed with pasta and lots of mozza make the perfect pairing for this easy dish. My mother in law shared this recipe with me. She made this dish for my husband when he was little. I like to doctor up my purchased pasta sauce with some Basil, garlic powder, and sugar but you can leave that out if not desired. You can also use any shape or size of pasta as well. The possibilities are endless and this recipe is only a guideline. Make it your own. Buffalo Wraps and Sweet Potato Fries Recipes If you saw on my Instagram or even on Facebook, I posted a picture of my laundry basket where I do a freezer inventory every week and get everything in the freezer that either needs to get used up or that looks good for that week. I grab my laundry basket and bring it up stairs to defrost in fridge (as you can tell my freezer is in our basement). After doing my freezer inventory, I write my weekly meal plan (you can learn more about how I meal plan HERE). Today, it was popcorn chicken! Apparently, I have picking up a bag every time I visit Target! So one of my absolute favorite things to make with popcorn chicken is Buffalo Wraps! My kids just eat the popcorn chicken or a wrap with no buffalo sauce. My sister Bailey gave me this Sweet Potato Fry recipe. She said she doesn’t like sweet potato fries, but she liked these so I thought I would give them a try! Boy am I glad I did!!! Check out my very brief "recipe," or guideline below. I used to sell these at my restaurant before I had kids and we called them Buffalo Bacon Ranch Wraps, and OMG they were a hot item let me tell you :) Sweet Potato Fries Ingredients: Sweet potatoes, sliced into fries olive/vegetable oil Garlic powder Salt Pepper Cayenne pepper Parmesan cheese Parsley Instructions: Toss everything in a bowl Spread evenly onto a sheet pan Bake at 450 degrees Toss in Parmesan cheese and parsley before serving Enjoy! Looking for easy kid friendly muffin tin recipes for dinner? It’s always fun finding ways to use those kitchen tools in unusual ways. Plus this recipe uses simple ingredients you will have right in your pantry. I love love love a super simple, yet yummy, kid friendly recipe. And what kid doesn’t love pizza anyways, extra win! Typically, at our house pizza night is Friday evening. But, during a busy weeknight, these Muffin Toast Pizzas were a hit! Plus, I loved how the kids could pretty much assemble the whole dinner! Ever wonder what it would feel like if dinner time came naturally? Or how you can create a way not to stress over meal planning? Below I share 4 ways on How NOT to do dinner. Instead of focusing on the long list of things we “think” we NEED to be doing to have a successful meal plan, here are 4 things you need to STOP doing today to help you get dinner done faster! #1 STOP letting time pass by without having a plan? Do not be afraid to create a plan that you wont follow to a T. A plan is exactly that, a PLAN! It is not concrete. So pick a night and take a few minutes to look at your calendar and create a meal plan or a guide to go by. #2 Stop dirtying dishes and making a mess for only 1 meal. If you are cutting, cooking, sautéing, and make a mess make at least 2 of that same dish and put one in the freezer for another night. Or, you can morph what you are cooking in to another dish like ground 10 pounds ground beef and morph into tacos, sloppy joe, and chili. #3 Stop letting your freezer inventory get low. I promise it will be worth 1 hour of your time to brown up a bunch of taco meat, ground beef, bacon, and sausage for your freezer. Keeping these on hand will be a huge time saver in whipping up casseroles, tacos, or spaghetti. #4 Last, STOP fretting over what to cook! Create a Master Meal sheet. All this is a brain dump of all your families favorites plus any new recipe your family likes. Then whenever you are creating your meal plan “guide” you will never draw a blank. I get a lot of questions about Cheese Soup. I have tried several recipes before, but I promise you, if we are at all alike, this will be your new one only Cheese Soup recipe Like I said, I have tried lots of cheese soup recipes, but this one is super easy and my favorite. I got the recipe from my husbands grandma, which is where I tasted this soup for the first time. If you don't think Velveeta is a "real" cheese like I do ( grew up with it and love the creamy texture it gives everything), then this recipe is probably not for you. I personally have not liked the other cheese soups I have tried with the fancy cheeses, because texture gets funky for me. {Mix & Match} Restaurant Style Salad
Do you love a good salad at a restaurant but not at home? Do you wonder if it is because someone else made it, or if it is just your cooking skills? Well, I honestly can admit I used to think good salads just couldn't be made at home. Something was always missing! But, I am here today to share with you how you CAN make amazing quick and delicious salads right at home! First, it starts with your grocery list! If you don't already have a system for your grocery shopping, you need to get one! It is kinda hard to make restaurant style salads without the essential ingredients. Second, take a few minutes and do some prep once a week so you can easily throw together several ingredients in no time. Third, JUST DO IT!!!!! I don't want to get on a rant and know I can be just as guilty, but we have to be sure and implement the stuff we find in our lives that are going to somehow benefit us. Whether taking a few minutes out of your week to prep these amazing salads to shed a few pounds, add more greens into your diet, to become healthier, or just because you want to, we have to make the time to take care of us. I find a lot of times people think eating healthy is expensive and takes a lot of time. I can say as it appears it may take more time, can I ask how long you have spent sitting in a fast food drive-through line before? When we think of it this way sometimes our attitude may shift to, "I don't want to make the time to eat healthier, " and if that is the answer then I am glad you recognize that because you are just setting yourself up to fail. But my point here is salads can be packed with flavor and absolutely delicious. Okay, now onto the recipes right? As you all may know by now I am not much of a measurer.
